The food was not cooked long enough.
Extend the cooking duration. If the food is already very dark, reduce the temperature by 10–20 °C.
It is normal for cakes containing quark to sink. After baking, leave the cake to stand in the switched-off Dialog oven for another 5 minutes to prevent it from sinking so much.
